Winter Loaf

Mmmmm!  What could be more comforting than the smell of cinnamon, nutmeg and cloves throughout the house on a cold winter morning?  Winter Loaf is moist, flavorful and easy to make, and will soon become a favorite treat at breakfast and at tea time. Happy Holidays!

Ingredients:


1 stick of Earth Balance or other vegan margarine

1 cup of sugar

1/2 cup raisins - dark or golden

1/2 cup dried cranberries

1 cup of hot water

1 teaspoon cinnamon

1 teaspoon nutmeg

1/8 teaspoon ground cloves

1 3/4 cups all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped walnuts


Steps:


Preheat over to 375F.  Prepare a loaf pan by greasing and flouring and shaking out any excess flour or use a non-stick pan.


In a large saucepan, melt the margarine slowly.  Once melted, add the sugar, raisins, dried cranberries, hot water, cinnamon, nutmeg and cloves. Bring to a good boil, remove from heat and let cool.  Once cool, add the flour, baking soda and salt.  Stir to combine.  Fold in the walnuts.  Pour into prepared pan and bake for 35 - 40 minutes, until the cake is set, but still has moist crumbs clinging on a toothpick tester.


Serve warm with margarine, vegan vanilla ice cream or with Coco Whip.
