Quietly Vegan


1. Mix all ingredients in a medium bowl and let rest in the refrigerator for an hour to let the flavors come together.

2. Serve on lettuce cups or in a sandwich or wrap with lettuce, sprouts and additional mayonnaise

3. Enjoy!

When we first moved to Richmond, Virginia 30 years ago, Ukrops was the premier grocery store chain in the area. Ukrops was known for delicious homemade salads, breads and pastries. One of my very favorite salads was the Tarragon Chicken Salad, made with tarragon, mayonnaise and golden raisins.  Here is my veganized version of this wonderful dish.

This recipe serves four

​Tarragon Chick*n Salad


1 10.5 ounce package Soy Delight nuggets, chopped either by hand or in a food processor

1/2  - 3/4 cup vegan mayonnaise 

1 stalk of celery finely diced

1 tablespoon dried tarragon

1/4 cup golden raisins

the zest from 1 lemon

salt & pepper
